Flowers: Very pretty blue daisy flowers from mid summer until the autumn.
Sun/shade: Grow in a sunny site.
Maintenance: Easy to grow. Dies back over the winter. Feed in the spring or after harvesting.
Soil: Well drained soil, prefers a slightly alkaline soil.
Harvesting: Pick flowers and young leaves from late summer. Harvest roots in th autumn. Remove all side shoots and store in dry sand.
Cooking uses: Dried roots can be baked and ground and used as a coffee substitute. The flowers and young leaves can be added to salads.
